I was only thinking this today. There are a few areas Im concerned with, the "SRS Airbag" logo which would have to have the letters cut around in the vinyl, or alternatively remove the letters from the dash. And ofcourse the actual airbag. It would be easy enough to wrap the whole dash and cut around the slot for the passenger side dashboard but does the airbag split that panel or just pop it up? If it splits then obviously it isnt possible to wrap it.
Plain wraps might also show through the texture of the dash, something like the 3m DiNoc carbon wouldnt though I would imagine.

I don't think you'd want it too shiny.. so no clear coat on it?

The DiNoc fabric is matt finish, I wouldnt be putting another layer of wrap over the top if I were you.
Thinking about it to overcome the SRS logo you could trace it onto paper and get a vinyl shop to cut it out for you. Then just wrap the dash from that side and work your way across

Anyways. 3M Di-Noc would do the job great, and it's matt so wouldn't be too distracting. It stretches pretty well and is very workable. If you've got no airbags then there wouldn't really be any issues. Personally however, I think that's be waaay too much Di-Noc for the inside of the car. I think it's better inside for just trims and enhancements.
(That said, I did my whole roof in Di-Noc, so if you think it would look good, then go for it
... shouldn't even cost too much)

Any covering over the airbag will render the vehicle with a defect and unroadworthy.
