Getting vinyl over the dash bits is quite difficult. I tried it with special carbon fibre vinyl, fake but it looks perfectly real.
The curves and shape of the dash bits are way too difficult to cover and still look good. you have to slit the vinyl; in places and it looks tacky. I tried it the other day. The only real way to do it would be to get it dipped with that special process. That would work, but costs more than vinyl and is not reversible.

There are different types of vinyl. You can get some that when heated stretches and can be used on odd shapes. There is one video clip on youtube that I have seen, where a guy wraps a mirror using a heat gun to stretch the vinyl.
The little doors above the gear selector will be hard as it has that little chrome strip and you can't really wrap the vinyl around it.
