This is not entirely true. While they may not look, hooking the car up to the diagnostic gear will definatley flag a change to the ECU.
Having said that - warranty voidance is very hard to prove. They have to PROVE that the mod was the direct cause of the error or issue. Having said that, the on-board computers log everything.
I was told that if i used the launch control in my evo more then 5 times the warranty was void. Thats utter BS. The car has no launch control officially so i can't use what i don't have. Secondly, they would have to prove the following fault that occoured, occoured due to me launching the car... good luck with that...
